Meal Plan 11/27-12/3

What I'm eating this week!

Sunday: Tomato Soup/Grilled Cheese

Monday: Sausage Balls, Turkey Sandwich, Swedish Meatballs

Tuesday: Pancakes, Chicken Pot Pie, Dumplings

Wednesday: Pancakes, Chicken Pot Pie, Swedish Meatballs

Thursday: Sausage Balls, Dumplings, Etouffe 

Friday: Pancakes/pop tarts, Hamburgers

Saturday: Sausage Balls, Hamburgers, Etouffe


Make All the Balls!

So lately I've been trying to do some different recipes, mainly to add some variety for me to eat. After a while life can become monotonous and eating habits can get stuck in a rut. I was looking through my recipe books and the recur for meatballs caught my eye. I love eating meatballs but I've never made them. So onto my meal plan they went! And I think it was the best idea I had all week. I ended up making a whole batch but that was a lot of meatballs for one person at one time so I think next time I will freeze half of them before I cook them!

I had such a good success with the meatballs, when I remembered that my mom used to make these breakfast sausage balls. So I looked up the recipe for those on Pinterest and whipped up a batch! It made almost 60 balls so half of those definitely went into the freezer. I've been snacking on them for breakfast all last week because they are easy to just grab a handful for a quick breakfast. Which is good for me with an almost eleven month old to chase around! 

Making these two dishes made me think of when Katherine and I worked at the Bean together and many of the desserts we made were in ball form. I remember at one point Katherine said how much she was starting to dislike all the desserts bc of all the balls. Haha. Ah good times!


Meal Plan: 11/20-11/26

So now that Kevin is off at work and not home for supper, I get to expand my meal plan and make dishes that he doesn't really care for. Which is super exciting to me! And with it getting colder that means soups!! I'm also taking another step and planning for breakfast and lunch, too. I basically stick to the same things for those two meals, but it will be nice to have them added to the plan. Also, another reason for meal planning is to use your plan to make your grocery list so by adding those meals it will help me with my grocery shopping! Baby steps!

Sunday: Banana Muffins, Nana's for lunch, Chicken Noodle Soup/Grilled Cheese

Monday: Banana Muffins, Potato Salad, Chicken Pot Pie

Tuesday: Pancakes, Grilled Cheese, Fried Rice

Wednesday: Banana Muffins, Potato Salad, Leftover chicken pot pie

Thursday: Thanksgiving!! Yay!!

Friday: Cinnamon rolls, Leftovers (yum, yum)

Saturday: Pancakes, Potato Salad, Grilled Cheese, Taco Soup


A New Hitch, A New Beginning

Whenever Kevin leaves to go on a new hitch, it always feels like a new beginning for me to get stuff done around the house. I mean, it may be that I am trying to fill my time that I would have otherwise spent with Kevin but it also gives me a fresh perspective on what needs to be done around the house. I hope I'm not going to overwhelm myself but I've come up with a list of (mostly) small projects that will slowly help get our house on better shape. I already began working on the new chicken coop and the front bed! So that's a good start and I've still got two weeks left until Kevin comes home.
 
1 - Submit DVDs and books to Amazon trade-in program
 
2 - Start building new chicken coop
 
3 - Clean our hallway closet
 
4 - Clean off front porch
 
5 - Remove stuff off bottom two shelves
 
6 - Weed front bed/thin out elephant ears

New Phase of Life

Ah! I'm an offshore wife again! I'm glad for us to be back in a life we are used to and comfortable in. Except this time I'm doing it with an infant and an extra dog in my house. Last night as I was driving home from church, I realized that I have a couple more responsibilities when it comes to taking care of the household. Like...tending to the dogs needs more.

 

Taking care of a ten month old is pretty much the most exhausting thing I've ever done. It's easy to let other things get forgotten such as giving the dogs food. Not that they're starving,  it's just, I pick up their food bowl usually to keep Fin from playing in the food. Which wouldn't be a big deal except for him, playing also means sticking it in his mouth and nobody wants that!

 

Leaving the house is a challenge these days because Finley is usually fussing about being in his car seat and the dogs are running around my feet like maniacs because they are excited either about getting a treat or they think they're going to go for a car ride. 

 

Coming home, Fin fell asleep in his car seat and I was so looking forward to putting him in his crib and then getting right into bed. But then I saw my poor doggies who were so glad that I was home and I knew I had to spend some time with them. So instead of snuggling down in my bed, there the four of us were, snuggling on the couch together. I'm very positive I made the right choice, too.

 

 


Meal Plan 11/13-11/19

So oops, I skipped last week! But here's what I'm planning to eat this week:

Sunday: Chili

Monday: Meatballs, baked green beans, baked potato

Tuesday: Taco soup, macaroni and cheese

Wednesday: Leftover Meatballs, macaroni and cheese

Thursday: Taco soup, salad

Friday: macaroni and cheese, potatoes

Saturday: Chicken noodle soup


Sitting at the Table

This past week I've been trying something different. We hardly ever sit at our dinner table for meals but I want to change that. Sitting on the couch worked for us when it was just the two of us, Kevin and me, but I don't want to deal with the madness that will come from having our kids eat sitting on the couch or on the floor or anything like that.

So this is us on the first day. Now that Finley is eating solid foods I'm slowly starting to get this breakfast and lunch thing down. My whole life after living at my parent's house I have only had to worry about myself for breakfast and lunch. Kevin just always did his own thing. Now I have another little mouth to feed and I'm finding it easier on both of us to sit at the table and eat instead of on the couch.
