Meal Plan No. 2

ok I have to do the kind of quickly because I just got out of the shower and I’m hiding in my room before Kevin realizes how long I’ve been back here! I didn’t post this on Sunday like I usually try to do so I’m just gonna start with Monday. 

Monday: Jambalaya with grilled potato cubes and roasted broccoli.

Tuesday: Spaghetti with baked green beans and potatoes halves

Wednesday: Leftovers

Thursday: Pancakes

Friday: Leftover Spaghetti (even though we will eat at church after the service)

Saturday: Crab Legs at the Beau Rivage! (This is for Adam’s birthday. Just because he moved away doesn’t mean we can’t still go out for his birthday!)

Goodness all of that sounds yummy! I don’t think I’ve mentioned this before but we eat sausage and eggs and biscuits practically every morning and then for lunch usually bagel bites or some kind of lunch meat!


Meal Plan No. 1: Jan 24-Jan 27

Okay my first serious meal plan of this year! It’s no secret that I love meal planning. When I first started doing it when we were completely broke, it really helped me not waste money or food and really helped me not get so discouraged about things.

Even though it has been a few months since I last set up a plan, I’m excited to get started again. It is real nice to have this set up and not have another decision to make on a daily basis. For the rest of the month of January I’ve challenged myself to cook all the food I currently have in the house. Surprisingly I had enough in the freezer and fridge for about two weeks worth of meals, breakfast, lunch, and supper! Normally I set my meal plans to go from Sunday to Saturday but I didn’t start until Wednesday this week.

Wednesday: Chicken Spectacular

Thursday: Dinner with the Powers

Friday: Black Eyed Peas & Sausage Soup

Saturday: Leftover Chicken Spectacular

I am super happy to be getting back in the habit of having a meal plan these days, it makes my life just a little bit easier!


Meal Plan: 12/3-12/9

Hey there strangers! It's naptime here for the Haddox household so I'm sitting outside on my back porch with the doggos having some much needed quiet time. I've been pretty busy these past few weeks(more on that later) so sitting here with the quietness of a chilly afternoon is really nice and enjoyable.

Tomorrow will have been a year since I have posted anything on this blog of mine so I thought I would dive right in with my easiest post, a meal plan! This is what we will be eating this week:

Monday: Beef Stew with Rice

Tuesday: Popcorn Shrimp and Roasted Veggies

Wednesday: Spaghetti

Thursday: Shrimp Gumbo

Friday: Haddox Family Dinner

My menu for this week has changed multiple times and this is pretty much what I've ended up with!

Monday: Pancakes, Pizza/potato salad, Chili

Wednesday: Sausage balls, Tacos

Thursday: Pancakes, Tacos, Jambalaya

Friday: Pancakes, Hamburgers, Spaghetti

Saturday: Pancakes/sausage balls, Jambalaya

Meal Planning: Let’s Go!

I have talked about meal planning before and never really stuck to it but now that we are on a tighter budget, I plan to be more serious about it.  I asked people and researched and Pinterested about how to lower a grocery bill.  Everyone and everything I read had one thing in common: that meal planning is the way to go.  We have reduced all of our expenses as best as we can and the only two things that are really what we can control now are our fuel usage and grocery spending.

In the past, I usually had an idea in mind for what we were going to eat, but making a written plan of meals is going to make things a little easier.  And apparently it is going to help my grocery bill so we will see!  At the very least, it will make me feel like I’m being more productive.

I kind of did some planning in the last couple of weeks of September and strictly used my debit card for all my grocery purchases.  I use the Mint app and consult it often to see how my spending is going.  So by using my debit card I was able to see about how much I spent on groceries last month.  From that information, I was able to set my budget for groceries at $350.00.  I feel like that is a pretty strict budget for what we are used to doing but I am serious about this!

Since I am a beginner, I’m starting with just dinner right now. Also, I do have room in there for a changeup such as going to eat with either of our parents. Kevin eats the same thing for breakfast every morning so I pretty much just have to make sure there is enough pop tarts for him to eat.  Finley and I eat a variation of oatmeal, pancakes, or eggs for breakfast.  It depends on my mood.  Lucky for me, he loves all food pretty much!

Well, we will see how this whole thing goes! I’ll check back later with my progress.
